Olive oil is the cornerstone of the Mediterranean diet, and at Luz de Alba we want to make knowledge about this product accessible to everyone. That is why we strive to explain each and every one of its properties, organise tastings, actively participate in promoting olive oil culture, and bring to market oil of the highest purity, made from a single variety of olive: Manzanilla Cacereña, Arbequina, Picual, Royal and Cornicabra. All of these oils have a distinctive character and very low acidity, below 0.2 per cent.

Manzanilla cacereña

A very fruity, delicate oil that is smooth on the palate, with a balance of bitterness and spiciness that gives way to an intense sensation of fresh fruit. On the nose, it offers aromas of freshly cut grass, kiwi, tomato, almond, mint, and basil.

This is a rare variety that we have planted at Finca Luz de Alba; it produces an elegant oil that is quite distinctive and very stable (with a longer shelf life).
Perfect for enhancing the aroma of any food and the flavor of purees, cheeses, fish, toast, salads, and cold dishes.

Arbequina

A fruity oil with an exquisite flavor—sweet, smooth, and delicate on the palate, with a slight hint of bitterness and spiciness. On the nose, it evokes notes of apple, banana, aromatic herbs, almond, and a hint of tomato.
This is a very fresh oil; due to its composition, it is essential to consume it as soon as possible, store it in a dark place, and keep it at the proper temperature.

Ideal for use with fresh or cooked vegetables, steamed or grilled fish, salads, seafood, marinades, preserves, and emulsions. It is particularly well-suited for delicate dishes such as sauces and baked goods, adding flavor without overpowering other seasonings.

Picual

A fruity oil with moderate bitterness and pungency, which give this oil a strong personality. On the palate, it is smooth yet full-bodied; its pungency evolves into notes of pepper and almond, resulting in a very balanced profile. The aroma evokes tomato plants and tomatoes, as well as banana, apple, freshly cut grass, and artichoke.

This oil is excellent due to its fatty acid composition and high content of natural antioxidants, making it a very healthy choice. Its high polyphenol content makes it highly stable, giving it a longer shelf life and excellent performance when used for cooking at high temperatures.
Ideal for enhancing the flavor of cold cuts, toast, raw and cold dishes, salads, marinades, sautés, and fried foods.

Royal

A fruity, sweet, smooth, delicate, and elegant oil with barely perceptible bitterness and spiciness. On the nose, it offers aromas of freshly cut grass, ripe figs, banana, vanilla, artichoke, pineapple, and nuts.

This is a rare variety native to the Sierra de Cazorla that has been on the brink of extinction for years. We have planted it on our farms in La Mancha, where it has adapted remarkably well, giving it a unique character and distinctive qualities.
Ideal for all kinds of salads, cold dishes, fish, baked goods, sauces, and toast.

Cornicabra

A fruity oil with a harmonious balance between bitterness and medium-intensity pungency. This olive oil has a smooth, velvety texture. On the nose, it evokes notes of apple, bitter almond, artichoke, avocado, and spices. It offers excellent aromas and flavors, along with remarkable subtlety and balance.

It features a balanced blend of essential fatty acids, with a high oleic acid content and monounsaturated fatty acids, resulting in a very healthy oil.
Ideal for enhancing the flavor of salads, toast, vegetables, roasts, stir-fries, and fried foods.

Innovation and cutting-edge technology
Luz de Alba is committed to improving olive oil production through cutting-edge techniques, both in cultivation and processing, with the aim of recapturing the essence of the most traditional olive oil. Luz de Alba olive oil is produced exclusively using mechanical processes or other physical methods that never alter the natural quality of the product.
Furthermore, it undergoes no treatment other than washing, decanting, centrifuging and filtering; a 100% natural process in keeping with tradition. Once obtained, the oil is stored in our cellar under optimal conditions of temperature, light and oxygen… And finally, bottling takes place to order – and not before – in dark glass bottles that ensure the preservation of all the oil’s properties.
Sustainability, ecology and health.
An oil of Luz de Alba’s quality is only possible through the utmost care for the environment. Our flavour is the result of 100% organic cultivation and production. At Finca Luz de Alba, we use renewable energy sources, such as solar power, and make full use of the olive crop: first by extracting the oil, then using the stones as biomass, and the rest as compost to fertilise the olive trees.
These processes exemplify our commitment to sustainability and also ensure that the health-promoting qualities of olive oil are preserved. Olive oil has been shown to be a powerful protector against cardiovascular disease, helps to reduce levels of bad cholesterol, improves blood circulation, prevents calcium loss and slows down cellular oxidation, amongst many other benefits.
