OUR HISTORY
More than just a farm, we are a living ecosystem. A pioneering project located in the heart of La Mancha, where the noble tradition of olive cultivation meets cutting-edge technology to create an unprecedented product.
The Origin
In the region of Argamasilla de Alba, our estate is home to more than 50,000 olive trees. This project stems from Tomás Gómez Cano’s dream: to show the world that Spanish olive oil not only competes but leads the way in global culinary excellence.
The Olive Oil Mill
Immediacy is our obsession. Since our mill is located right on the estate, we press the olives just a few hours after they are harvested. The result is a vibrant freshness and minimal acidity (< less than 0.2%) that cannot be achieved by other means.
In the same building as the oil mill, we also have a tasting room and an oil shop, offering a complete experience where production, tasting, and shopping all take place in a single space.

INNOVATION
We combine the wisdom of traditional cultivation with the most advanced cold extraction techniques. We monitor each tree individually and harvest them at the exact moment of color change to ensure the highest quality.
THE ENVIRONMENT
The extreme climate of La Mancha, with its freezing winters and scorching summers, shapes the character of our soil. A unique terroir that imparts character to our single-varietal oils: Picual, Arbequina, Cornicabra, Royal, and Manzanilla Cacereña.
